How do I cook rice ?

Rice is a tricky food to cook to perfection; many people have their own techniques and methods. Here we present a simple method for ensuring great rice every time.

1. Prepare the rice by washing thoroughly - many westerners ignore this fact but it is prevalent in asian cooking. The reason for washing the rice is to remove excess starch. Rinse the rice under the tap untill the water runs clear. Washing the rice also helps to separate the grains and make the rice fluffier when cooked.

2. Soak the rice, if it is brown rice the best to leave it over night. If using white rice then 30 minutes to an hour should suffice. Rice that has been soaked cooks quicker and has a better texture.

3. Drain your rice of excess water and replace fresh water - 2 cups of water per 1 cup of rice. Add the rice and water to a heavy cooking pot - a thinner one could burn the rice as it cooks.

4. Bring the rice and water to the boil, once the water is bubbling turn the heat right down to a slow heat, place the lid on the cooking pot and leave for 12 - 20 minutes. Try not to lift the lid while cooking as this disturbs the cooking process.

5. Once the rice is cooked it should be light and fluffy, stir with a fork and leave to sit for 5 - 10 minutes and serve - voila perfect rice every time!
